Ingredients:
- 1.5 kg of lamb (shoulder or chops)
- 4 large potatoes
- 2 large onions
- 4 cloves of garlic
- 3 tomatoes
- 100 ml of white wine
- 50 ml of olive oil
- Juice of one lemon
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- Salt and pepper to taste
- Bay leaves (optional)
- Baking paper or baking bags
Preparation:
- Start by trimming the lamb meat, then cut it into large pieces.
- In a large bowl, mix the meat with chopped garlic, lemon juice, olive oil, white wine, oregano, thyme, rosemary, salt, and pepper. Cover the bowl and let the meat marinate for at least 2 hours in the refrigerator.
- Peel and quarter the potatoes and slice the onions thickly.
- Preheat the oven to 170°C.
- In a baking bag or on a sheet of baking paper, place a portion of the potatoes and onions, then add a portion of the meat and some tomato slices. Continue adding layers until all ingredients are used, then add the bay leaves.
- If using a baking bag, seal it with the clips provided for a perfect seal. If using baking paper, ensure it is securely tied.
- Place the kleftiko package in a tray or ceramic dish and bake for 3 hours.
